The Japan Herb Research Institute has developed Forest Gin, a fragrant wood liquor that makes effective use of unused Japanese wood. More than 60% of the raw materials are made from thinned cedar, cypress, and oak trees, and 100% of the botanical ingredients are domestic wild fragrant woods, making this the first attempt of its kind in Japan.

In addition to exploring new delicious flavors by using wood in food, the project also aims to revitalize Japan's forestry industry by finding new ways to deal with thinning timber, which is currently a problem in the forests that cover 70% of Japan's land area, and by realizing fair trade, in which timber is purchased from forestry workers at a fair price that is higher than the market price.

Taste
Forest Gin gives you an overwhelming "forest feeling" as if you were taking a deep breath in a deep, green forest. The fresh blue scent extracted from the branches and leaves of cypress leaves and leaves, the delicate fragrance of cedar apples, and the sour aftertaste of the sacred wood of Mount Koya, the Japanese cedar, which is also used in Shinto rituals. Juniper serrata and Japanese laurel act as Japanese juniper berries, bringing out the spicy and gorgeous flavor.
