It's back again this year, scented only with fallen Katsura leaves.
This is definitely the only "Fallen Leaf Sake" in the world.
The leaves of the deciduous broadleaf tree "Katsura" have a caramel scent in autumn.
This is because of the aromatic compound "maltol" that occurs when sugar is burnt. Strangely, the green leaves do not have this scent.
We collected a lot of sweet fallen leaves, which can only be harvested in autumn, from the Hida forest in Gifu and made a delicious sake.
Even richer and sweeter than last year.
●What does it taste like?
It has a captivating taste like black tea + caramel. There is a drink called Tiffin, and I think that is the closest flavor.
●What is the best way to drink it?
Mixing it with milk is highly recommended. Another recommendation is to drink it straight with a little water, swirl it around in your mouth, and enjoy the aroma unfolding.
●Why is it called Katsura Milk?
When I first came across these leaves in the forests around Lake Towada in Aomori, I had a sudden inspiration. "This scent would definitely go well with milk. I know, I want to make a drink with a pun on Katsura Milk..." (laughs).
